Beet & Rye Panzanella
So colourful and flavourful...Yum! Don't like or can't eat rye bread? Walnuts or pecans would make a great substitute. Adding arugula could give this dish a nice little spice.
I love savouring pickled beets with a nice roast, quiche or in a crispy leafy salads. The sweet, tarty flavours make a great accompaniment to most main dishes.
