But I would like to argue that most of the time it's not about not liking the taste of eggplant, it's more often that they don't know what to do with it. Eggplant is a special vegetable that needs just the right care in order to be delicious. But when it's done right, oh man does it shine!!! Personally, instead of pan frying the eggplant, I find it easier to bake it at high heat (450 F) until it's golden brown on one side. That way, you have less risk of it turning into a mushy mess.
I've been pickling a one or two bottles of eggplants for the past three years, and at this point, I don't think I could live without them. They are great in salads, sandwiches or pesto pasta! YUM!
